Vegan Avocado & Black Bean Pitas

I’m a total sandwich girl. You can make a sandwich anyhow, anyway, and I will eat it. Not only do I love sandwiches because of how tasty they are, but I love the ease of them. Sandwiches take almost no time to put together and are super easy to pack and take on the go.

I work overnight shifts at my job, and because I’m the only one scheduled I’m not able to go upstairs to use the employee microwave. So, I’m always trying to think of easy, non-cook items I can bring to work. Working overnights, I need something that is going to give me energy and keep me awake.

These Avocado & Black Bean Pitas are one of my favorite sandwiches. Filled with healthy, wholesome ingredients, they make the perfect plant-based lunch, no-cook dinner, or even snack.

Avocados have such a unique taste. They’re one of those foods that you don’t need to add a lot of flavor too. A few simple ingredients can really bring through the fruits natural flavor. To give it a savory touch, I added some garlic powder, salt, pepper and lime juice.

The black beans and mashed avocado add a delicious creaminess, the spinach brings a fresh note, and the crisp red bell peppers provide a crunchy texture.

Aside from how incredibly delicious these Avocado & Black Bean Pitas taste, they are highly nutritious. They contain healthy fats from the avocado, a good source of protein from the beans, and whole-grain carbohydrates from the pitas. Instructions
  1. In a bowl, mash up 4 avocados. Add lime juice and seasonings (garlic powder, salt & pepper). Mix well.
  2. Take a generous spoonful of mashed avocado and spread it across your pita.
  3. Throw on about 1/4 cup black beans. Top with a few red pepper slices and a handful of baby spinach leaves. Enjoy!
