I have a secret…I don’t like vegetables!
OK well, that’s not the entire truth. I do actually like vegetables. But, it took me a long time to get to this point. I used to hate them, but after a while of adding them into my diet, I slowly developed a liking. And now, I love them!
There are some vegetables that I like to keep simple. Squash, potatoes, and asparagus are all veggies that I can just roast with a bit of salt, pepper, and oil and be one happy girl. But others really need to be a little more dressed up for me to enjoy them.
Spinach is one of those vegetables. I like getting spinach in my diet because it’s so healthy. It’s high in protein and contains so many vitamins and minerals. But, it definitely needs to be seasoned right if I’m going to enjoy it.
